A few days ago when I was rummaging through the fridge, I actually found a box of sandwiches my husband had frozen in the freezer... and there was mayonnaise spread on them! I was completely shocked on the spot: Can mayonnaise be frozen? Is it still edible?

It can be frozen, but it's best not to.
Because mayonnaise is an emulsion made from oil, water, and egg yolks. Freezing will directly "collapse" this emulsified structure! What does this mean? That is, after you thaw it, it will separate into oil and water, just like a split, and it's not the smooth and thick texture you're familiar with at all.
It looks watery, has a grainy texture, and has a bit of a strange taste... I really don't recommend it.

How to fix frozen mayonnaise?

Re-beat it with a whisk. Sometimes, part of the emulsified structure can be saved;
Add a little warm water, lemon juice, mustard, or egg yolk, and then beat it again. Maybe it will recover a bit;
If all else fails, just use it as a "cooked food sauce", for example, for stir-frying or roasting chicken legs - don't waste it!
But to be honest, different brands perform differently. Some simply can't be saved.
So the key is still the old saying: The greatest respect for it is not to freeze it.
How to store mayonnaise?
The correct storage method is really important! Many people only use mayonnaise once or twice, and when they open it a few days later, they feel that the taste is off. In fact, it may be that the storage method is wrong.
✅ For unopened mayonnaise: Just place it in a cool cabinet. Keep it out of the sun and away from the stove.
✅ After opening: Immediately put it in the refrigerator, and use a clean and dry spoon every time you take the sauce.
✅ Don't place it by the refrigerator door where the temperature is unstable.
It's best to finish opened mayonnaise within 1 month. The fresher it is, the better it tastes.
Can you freeze mayonnaise on a sandwich?

Can you freeze mayonnaise based chicken salad?
Chicken salad is super suitable for a light lunch. But you're also worried it will spoil if stored for too long. So can chicken salad with mayonnaise be frozen? The answer is - barely, but not recommended.
The problems lie in two aspects:
Mayonnaise still has the same old issues: separating layers, releasing water, and having a poor taste;
The chicken will become dry and tough after freezing, especially after thawing and stirring, and the whole thing will be like the salad has turned into "chicken paste"...
If you want to eat chicken salad and save some trouble? You can:
First, only freeze the chicken pieces;
Add fresh mayonnaise, celery, carrots, etc. and mix well when you eat.
This way, not only can you preserve the texture, but you also don't have to worry about water release or flavor changes. It's a win-win situation!
